What is wine?

Wine can be primarily defined as an alcoholic beverage which is made up of the fermentation of Fruit juice; but mostly in case of choosing the fruit juice for wine, grape juices are widely used. And the other fruits like blueberries, raspberries, and strawberries can also be used for wine but they are rarely used as a fruit juice for winemaking.

Why grapes are mostly used for winemaking?

Grapes are mostly used because of two main reasons.

  1. First, there is an acid which is found in grapes and preserves the grape juice for decades and even for centuries.
  2. Second, there is a lot of sugar in grapes as compare to the other fruits and this sugar helps to produce the wines stronger because almost all the sugar is converted into alcohol.

What Is Wine Fermentation?

The fermentation is defined as the process by which yeast consumes the sugars from the grapes and produces alcohol and carbon dioxide releases. If there is more sugar in the grapes, then there will be the production of more alcohol in the resulting process. The yeast exists naturally on grapes and grape vines, by which the fermentation occurs naturally, but the winemakers may also add more yeast to have better control over the process.

What is Wine Vintage in winemaking?

Vintage is the combination of two words that is Vint + age.

Vint indicates the grapes picking and age indicates the year of picking of the grapes.

A vintage wine can be defined as the wine obtained from grapes and these grapes are primarily grown and harvested in a specified single year. Most of the wines come from a specified single vintage, and the year of the wine is labeled on the bottles will show the year in which the wine was made.

Ingredients of grapes wine:

1. Grapes and Yeast:

Grapes are the heart of the wine. You can say that wine starts with grapes and also ends with grapes. Grapes have the sugar. And yeast is needed to convert the grape’s sugar into alcohol.

Yeast is naturally found on the skin of the grapes. The yeast converts the sweet grape juice into wine. They consume sugar and produce alcohol as a by-product.

White grapes make the colorless wine or white wines. The skin color of the grape decides the color of the wine. But the white wine can be made from red and black grapes as well.

2. Acid:

Acid is the ingredient of fruit which naturally occurring in all the fruit. The Acid is that part of wine that makes a flavor of wine on your lips and leaves your mouth watering.

Grapes are come primarily with hard Malic acid and Tartaric acids, though many white grapes and most red grapes go through a secondary fermentation termed as bacterial fermentation. Due to which Malic acid of green apples is converted into the softer acid (lactic acid).

Because of the differences in the grapes and winemaking process, some wines tend to be more acidic and some wines tend to less acidic. Here are some Examples of higher acidic wines include sparkling wines, dry Riesling, Sauvignon Blanc, and Chianti.

3. Tannins:

The tannin in wines act as a preservative ingredient and, along with acidity, the tannins are referred to as the structure of a wine. Tannins make your mouth crumple and are likely to feel dry, and your gums feel misty. That is why the winemakers should have the right balance between dry tannins and mouthwatering acids which is a pretty important factor in winemaking. Tannins can be added to wines in the form of powder

Additives:

Additives are used to improve the wine. In modern winemaking, additives become a common ingredient of the recipe of wine. Here are some of the additives are listed below-

Sulfur: Sulfites are used to kill yeasts and unwanted bacteria in the winemaking process. Sulfur products are used in wine as an anti-oxidative preservative. The sulfur products have long historical root in winemaking. These additives are labeled on the wine bottle.

Copper sulfate is added to remove the free sulfur available in the wine. The copper has the same effect like putting a penny in the wine to remove smells.

Acetaldehyde is used for color stabilization of juice before concentration. The amount of Acetaldehyde used must not exceed 300 ppm, and the final concentrate must have no detectable level. This happens naturally in grapes.

Enzymes are added to wine at the time of fermentation to prevent the growth of bad yeasts otherwise they can cause the wine to spoil.

De-acidifiers like Calcium Carbonate are added to wine which will reduce the high acid levels of wine and increase the pH value of the wine.

Acidifiers like Tartaric Acid, Malic Acid, and Citric Acid are added to balance the wine and decrease the pH value of the wine. Addition of acidifiers is common in warmer regions with lower acidic grapes.

Winemaking is not only an art but also it is a science. Winemaking science is called as enology and the person who makes the wine is called a vintner or winemaker. It is a natural process which requires a little human interference, but each winemaker controls the process through different techniques.

1. White wine:

White wines are mostly made from white grapes. Many of you guys may understand that white wine is only made of white grapes alone, but actually, it can be made of either red grapes or black grapes. To make the white wine in the right way is to extract the red pigments away from the grapes and utilize the grape juice only. The most popular varieties are:

2. Red wine:

3. Rose wine:

When we think about Sparkling wine, we have a recall of the celebration. The Sparkling wines are made up of most varieties of grapes. The sparkling bubbles of carbon dioxide (CO2) occur naturally during the fermentation process. It can be further categorized by region. For example Cava in Spain, Asti or Prosecco from Italy and Champagne from the Champagne region in France. But Champagne is known to be the most famous sparkling wine in many regions in the world. 5. Dessert wine:

You can define the dessert wine in many different ways or you can say that there is no constant definition of Dessert wine or Sweet wine. Dessert or Sweet wine has a high sugar content. It can be made sweet by many different ways, for example: harvesting the grapes at the end when sugar levels are high or drying the grapes on the chuff mat to concentrate the sugars in the wine fermentation.

6. Fortified wine:

Fortified Wine

Fortified wine is that which have Brandy or other spirits added to the juice during the fermentation process of winemaking. And the Brandy stops the fermentation process, due to which a large amount of sugar is left in the wine. The most famous wine variety is:

  • Late Harvest Rieslings
  • Port
  • Sherry
